How to Make Raspberry Cake in This National Raspberry Cakes

Ingredients  
1-1/2 cups crushed vanilla wafers (about 45 wafers)
                  
1/3 cup chopped pecans

1/4 cup butter, melted

FILLING:

1 package (8 ounces) cream cheese, softened

 2/3 cup confectioners' sugar

2 tablespoons orange liqueur

1 teaspoon vanilla extract

1 cup heavy whipping cream, whipped

TOPPING:

1 cup sugar

3 tablespoons cornstarch

3 tablespoons water
 2-1/2 cups fresh or frozen raspberries, divided
Direction
Combine the wafer morsels, pecans and margarine. Press onto the base and up the sides of a lubed 9-in. pie plate.

In a vast bowl, beat the cream cheddar, confectioners' sugar, alcohol and vanilla until light and soft. Crease in whipped cream. Spread into outside layer. Chill until serving.

In a little pot, join sugar and cornstarch; blend in water and 1-1/2 mugs raspberries. Heat to the point of boiling; cook and mix for 2 minutes or until thickened. Exchange to a bowl; refrigerate until chilled.

Spread beating over filling. Topping with outstanding berries
